Three-Step Snack For Coaches & Athletes On The Go!

Even in the summer, 24 hours isn’t enough time try to follow a well-balanced lifestyle. We need to exercise, work or study, do chores, and spend time with our family and friends! Unfortunately, cooking full blown meals doesn’t always fit into the schedule. But three-step snacks like this are great to eat on the run or to serve at last-minute team parties. 

Here’s a three-step snack that’s tasty, healthy and quick!

Caprese Kabobs

Total prep time: 10 minutes
Serving size: 12 kabobs

What you need:

  • 24 grape or cherry tomatoes (could be red or yellow tomatoes)
  • 12 cherry-size fresh mozzarella cheese balls or chunks
  • 24 fresh basil leaves
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 12 skewer sticks

Directions:

1. Wash your tomatoes first, then place on a skewer in this order until you have used up the space:

  • ​Tomato
  • Basil leaf
  • ​Mozzarella ball

2. Place the full skewers on a serving plate or in a plastic travel container.

3. In a small bowl, mix the oil and vinegar together and whisk. Drizzle the mixture over the kabobs just before serving or eating. Sprinkle with salt and pepper if you desire.

Other options:

  • For smaller portions, use toothpicks and only include one tomato and one mozzarella ball.
  • Add grilled chicken cubes for more protein if desired
  • Add chunks of zucchini, squash or cucumber if you’re looking to include more veggies
