Coach – Try this Quick & Healthy Team Snack!

Sometimes when you hear ‘healthy snack’ you think about not-so-tasty treats. But this healthy, flavor packed recipe is delicious and nutritious! Easy to make and filling, you’ll like it so much you’ll want to eat it for lunch, dinner and as a snack!

You can refrigerate and eat on this colorful combo for several days so it’s perfect for team parties or pot-luck lunches at school!

FLAVOR FIESTA

Total prep time: 15 minutes

What you need:

  • Quinoa
  • Black beans (canned are easiest)
  • Bell peppers (red, yellow & orange)
  • Pico De Gallo (can easily be bought at a local Mexican restaurant or at the supermarket)
  • Whole wheat tortillas

Directions:

  • Two cups of quinoa – cook following directions on packaging
  • Microwave 1-2 cans of black beans in a bowl. (flavored black beans if you prefer your food a little spicy)
  • Chop 9 small yellow, red and orange bell peppers to add flavor and color
  • Get a large plastic container with a lid – preferably long and rectangular
  • Pour ingredients into container and mix thoroughly
  • Salt to flavor

This snack is great with:

  • Whole wheat tortillas
  • Pita Bread
  • Tortilla chips
  • Rice cakes
  • Melba toast
  • On top of a potato
  • On top of a spinach salad
